Ingredients:
1C Coconut Milk (or other non-dairy milk) - I use sweetened vanilla
1/2C Berries (fresh or frozen)
1t Vanilla
Mix in the Vitamix
Stir in 1/3C of Chia seeds, let sit for 2 minutes and stir again. Wait approximately 25 minutes for it to thicken.
It's ready to eat. Enjoy!
Adjust amounts as needed. Add a little Raw Agave or Maple Syrup (not raw) to sweeten if needed. Will keep in fridge.
(for a variety use raw cacao powder instead of berries for a chocolate version)
Chia seeds are a great source of energy, known as the 'runners' food.
