Caesar Dressing and Salad
SO it's been a while since I've posted, but thanks to my friend, Wendy, for asking me for new recipes, this is for her! :)
Caesar Dressing
1C raw sunflower seeds, ground fine
1 lemon, juiced
3-4 cloves of garlic
1/2-1t of sea salt
1T Extra Virgin Olive Oil
1/3C water
Mix in magic bullet or blender. I used half on the salad and saved the other half for later....store it in a glass or plastic container in the fridge for several days. This also makes a great dip, just use a little less water.
For the salad, you can use any combo you want, here's what I threw together today. A lot of times I also add an avocado or use some red onion.
Salad (serves 2)
1 head of romaine lettuce, chopped or torn
3 roma tomatoes, chopped
3 green onions, chopped
2 carrots, chopped
Add 1/2 of dressing above and toss and serve

Spicy Thai Dressing II
I am TOTALLY ADDICTED to this dressing! This is a different version then the previous one I posted. I have used it on several things, cabbage is probably my favorite, but it's also good on lettuce, cauliflower and kale. As you can see I've been eating it a lot!!!
1/3C Peanut Butter (all natural nothing added...I grind my own at Whole Foods)
1T Peanut Oil
1/2 Lime Juiced
4T Water
1T Sesame Oil
1T Maple Syrup (pure maple syrup NOT maple flavored syrup)
1 clove garlic crushed
1/4T Cayenne Pepper (or adjust to taste)
dash of sea salt
Blend in magic bullet or blender.
Beware though it is addictive!!!!

Cauliflower Cilantro Salad
4C cauliflower (or one head)
1 red onion, finely chopped
1 lemon, juiced
2T extra virgin olive oil (EVOO)
2T fresh cilantro or parsley, finely chopped
1 garlic, crushed
2 medium tomatoes, diced
Combine all ingredients in a large bowl and mix well.
Chill for 2 hours before serving.

Avocado Tomato Salad
Serves 2
2 tomatoes, diced
1 avocado, diced
1C broccoli, cut into small pieces
1C cauliflower, cut into small pieces
1 lemon, juiced
2T extra virgin olive oil (EVOO)
1t sea salt
1/4C fresh parsley or basil (or both), finely chopped
1 garlic chopped
Combine tomatoes, avocado, broccoli and cauliflower in a large bowl.
In a jar or magic bullet, combine remaining ingredients, cover and shake or process, pour over salad and gently toss.
Serve as is or on a bed of sprouts.

Raw/Vegan TOONA (Mock Tuna)
This is pretty good alternative to tuna!

1C walnuts
1/2 lemon, juiced
1 garlic clove, crushed
1t dulse powder
1/8C Nama Shoya or Braggs Liquid Aminos (soy sauce alternatives) or 1 1/2t sea salt
1/4 medium onion, finely chopped
1 large celery stalk, finely chopped
1/4C fresh parsley, finely chopped
1/2t kelp powder
1 garlic clove, crushed
In food processor, blend sunflower seeds, lemon juice, dulse, Nama until smooth. Transfer to a bowl and fold in remaining ingredients and mix well by hand.
Serve with celery or carrots or spread over a lettuce leaf.

Sour Cream & Chive Dip (NON DAIRY)
(makes 1C)
This dip is good with veggies or chips!
1C raw cashews, soaked overnight
1/4C - 1/2C water (depending on desired thickness)
1 1/2T fresh squeezed lemon juice (i use a citrus press)
1T garlic powder
1T onion powder
1/4T sea salt (or to taste)
4-5 green onions, diced (if you use the whole onion the dip will be green, you can also use just the white bulbs)
1T minced fresh basil(or parsley)
1T minced fresh dill
1 garlic, crushed
pepper to taste
seasoned salt to taste
Process cashews, water, lemon juice in food processor until smooth and creamy. Add garlic and onion powders, salt, garlic, pepper and seasoned salt and process until smooth. Add green onions, basil and dill and pulse briefly to mix (otherwise your dip will be green, you can also mix the basil and dill by hand).
Dip should have a thick consistency.
Chill at least 2 hours before serving.
Serve with veggies.
Store in a sealed container in fridge for up to 5 days.

Oatmeal
YUMMY YUMMY Raw Oatmeal!
(serves 4-6)
This is SOOO easy and SUPER YUMMY!
3C steel cut oat groats (soaked overnight)
1/3C pure organic maple syrup (not maple flavored syrup) - adjust to taste
1T cinnamon (adjust to taste)
1/2t sea salt
1C raisins
1t vanilla
Drain water from the oats.
In the food processor, combine all ingredients and process.
For Variety:
Add a cored apple with skin or strawberries or other favorite fruit.
